Eggs have been a constant companion for years in many of my meals. Although simple, they can be used in many different variety of preparations, in breakfast, main meals or even snacks and starters. Today let’s see how to make all famous Basic Anda Curry. This curry is one of the most simple recipes available to us and can be made fairly quickly, at the same time it provides for great nutrition, flavor and taste. I generally serve this curry with home made roti, however some people also like it with boiled rice. This was the first curry preparation I learned when I started to cook, like many of my fellow friends. Ingredients needed for Egg Curry

(serves 2)

  • Eggs – 4
  • Zeera – 1 tsp
  • Onion – 1 cup (grated)
  • Ginger garlic paste – 1 tsp
  • Green chili – 1 tsp (chopped)
  • Tomato – 1/2 cup (chopped)
  • Coriander powder – 2 tsp
  • Red chili powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Salt – 1 & 1/2 tsp
  • Garam masala – 1/2 tsp
  • Oil – 2 tbsp
  • Fresh coriander for garnishing

How to make Anda Curry

Preparation time: 10 min.

Cooking time: 20 min.

  • Hard boil the eggs with 1/2 tsp salt and cool water, cover and keep for 10 min.
  • Cool and peel the cover and cut into halves. Keep aside.
  • Heat oil in a pan, crackle zeera.
  • Add and saute onions till golden brown.
  • Add green chili, ginger garlic paste and saute for 2 min.
  • Add tomatoes and saute until the oil leaves the sides.
  • Add coriander powder, red chili powder, turmeric powder, salt with little water and saute for 3-4 min.
  • Add 2 cup water, let it come to a boil, add eggs and let it boil on low heat for 3-4 min.
  • Add garam masala and garnish with fresh coriander leaves.
  • Serve.
