Christmas is a season for celebration and no celebration is complete without a cake, one of the most sought after cake in this context is Christmas Plum Cake. However as the name suggests this cake does not use plums as the ingredient, well Christmas is any way not the season for plums, what we add in this cake is a lot of soaked dry fruits. These dry fruits can be soaked in orange juice or rum, I prefer the latter, however based on your personal preference you can choose orange juice and still make a good cake. its good to soak them for about a week, however if you are short on time, then you could do it for a lesser time. Ingredients needed for Christmas Plum Cake
(makes a 8 inch cake)
For Soaking
Dry fruits – 1 cup (I used almonds, cashews, raisins, walnuts, blackcurrent, candied ginger, candied orange peel)
Nutmeg powder – 1/2 tsp
Cinnamon powder – 1/2 tsp
Rum – 2 cups
For Cake
Maida – 1 cup
Unsalted butter – 1 cup
Brown sugar – 3/4 cup
Eggs – 3/4
Vanilla essence – 2 tsp
Nutmeg powder – 1/2 tsp
Cardamom powder – 1/2 tsp
Clove powder – 1/2 tsp
Cinnamon powder – 1/2 tsp
How to make Christmas Plum Cake
Preparation time: 45 min
Cooking time: 1 hour 45 min.
Chop the dry fruits and soak them along with nutmeg and cinnamon powder in rum or orange juice for 1 week, keep it refrigerated while soaking.
Pre heat the oven to 160 C.
In a bowl, mix butter and brown sugar and whisk vigorusly for about 5 min.
Add eggs and mix well.
Add vanilla essence and mix.
Add the maida and mix well.
Add the soaked dry fruits and spice powders to this batter and mix.
Grease a 8 inch cake pan with some oil, then dust with some maida.
Pour the batter into the pan.
Bake for 1 hour 30 min.
Take the pan out, cool down and remove the cake.
Cut and serve.
