Good news vegans! You can enjoy Christmas as much as the meat-eaters do! Loaded with nutrition-packed veggies, this Italian delicacy can be served with both main meal and salad.

Ingredients

1 brown onion, finely chopped

800 g butternut pumpkin, chop into a cm-thick slices

2 medium zucchini, sliced, halved

200 g button mushrooms, thickly sliced

2 garlic cloves, crushed

1.5 tablespoons olive oil

1 red capsicum, chopped

80 g baby spinach

1 medium eggplant/brinjal, chopped

30 g butter

400 g can diced tomatoes with basil and oregano

2 cups reduced-fat milk

1 cup grated mozzarella cheese

2 tbsp plain flour

125 g dried lasagne pasta sheets

Instructions

1. Preheat the oven to 160°C/180°C. Take a baking tray and the baking paper. In one layer arrange the pumpkin on the tray. Spray all over with 2 teaspoons of oil. Bake until tender. It’ll take about 20 minutes. Then, set it aside.

2. Take the remaining oil and heat it at medium heat in a frying pan. Add mushroom, eggplant/brinjal, zucchini, capsicum, garlic, and onion. Cook for 10 minutes or until eggplant goes tender. Add tomato to the pan and let it boil. Now, heat at low flame. Keep simmering for 10 minutes and let the sauce thickened. Turn off the heat and add spinach. Set it aside for 2 minutes and cover it. Season with pepper and salt on the mix with wilted spinach.

3. Take another pan and melt the butter over medium heat until it foams. Now, add flour. Cook for 1 minute with frequent stirring, until it bubbles. Turn off the heat. Slowly add milk and keep stirring in order to avoid the formation of lumps. Turn on the heat again and cook for 5 minutes. Let it come to boil. This will thicken the sauce. Remove it from heat and mix half of the cheese. Keep it aside.

4. Grease a 25 cm base, 7 cm-deep baking dish. Put in half of the veg mix into the dish. Put half of the pumpkin on the dish over the veg mixture. Put half the lasagna sheets over the top layer on the dish. Break the sheets in order to fit. Repeat the layers. Spread the sauce and remaining cheese all over it. Bake until golden colour appears. It’ll take about 40 minutes. Set aside for 10 minutes and then serve.
