Rose or gulab has had a special significance not just for India, but for the world. The beautiful flower has been used to demonstrate love, affection and care. In the Indian cuisine we have used rose water and petals for many special preparations. Today I used the rose water with phirni to make Gulab Phirni. I decorated it with some rose petals and served it as a dessert and it gave an ultimate appeal. The taste also came out wonderful and it made a perfect ending to a great meal. Refrigerate it after making for at least a couple of hours to bring out the best. If you have any earthen pots for serving, it will maximize the appeal and taste. All you need is (serves 4)

Full cream milk – 1 lt

Rice – 4 tbsp

Sugar -1/2 cup

Rose petals – 2 tbsp (chopped) + for garnishing

Rose water – 1 tsp

Dry fruit slivers for garnishing

Gulab Phirni Recipe

Preparation time: 10 min.

Cooking time: 45 min.

Soak the rice in water for about 15 min, drain and grind the rice to a coarse paste.

Boil the milk, once it comes to a boil, add rice paste and chopped rose petals and cook till it reduces and thickens.

Add sugar and cook for another 5 min.

Transfer to the serving plates and refrigerate.

Garnish with dry fruit slivers and fresh rose petals.

Serve cold.
