In India vegetables are used a lot and cooked with various methods and every home has its own unique recipes to make vegetables more interesting and tasty. Apart from regular leafy vegetables I also like yellow and red bell peppers, zucchini and mushrooms and so today I thought of experimenting with these veggies. With love for pasta growing, I made a ‘Healthy Pasta in Vegetable Sauce’ and used all the above mentioned vegetables with some penne pasta for dinner. I used very light oil and boiled pasta, so I could easily say that it was a real healthy dish to have. Use this recipe to make Healthy Pasta in Vegetable Sauce and enjoy with your family.
Ingredients needed for Healthy Pasta In Vegetable Sauce
(Serves 2)
All you need is:
Penne pasta – 2 cups (Boiled as per manufacturer’s instruction)
Mixed vegetables – 1 cups (finely chopped bell peppers, zucchini, mushrooms, etc)
Tomatoes – 2 (chopped)
Olive oil – 2 tbsp
Garlic – 6-7 cloves (chopped)
Mixed dried herbs – 2 tsp
Mozzarella cheese – 1/2 cup
How to make Healthy Pasta In Vegetable Sauce
Preheat the oven to 180 degrees C.
Layer the vegetables and tomatoes in a baking tray and sprinkle some salt and pepper.
Bake the vegetables and tomatoes till slightly brown.
Blend in a blender to make a puree.
Heat olive oil in a pan.
Add garlic and fry till pinkish.
Add the vegetable sauce.
Add mixed herbs and pasta.
Transfer the pasta to a baking dish.
Sprinkle mozzarella cheese on top.
Bake for 10-15 minutes.
Serve hot.
