II. Spinach and Feta Crepes: Breakfast, brunch, or evening snack, these crepes always come to rescue calming down those hunger pangs. And, moreover, they are over the top nutritious. Perfect snacks to spice up winters!

 

Ingredients:

For crepes:

  • 1/4 cup milk (skimmed or whole fat)
  • 1/3 cup water
  • 1/2 cup flour
  • 1 tsp honey
  • 1/8 cup butter, melted
  • 1 tbsp vegetable oil
  • A pinch of salt
  • extra butter for crisping crepe

For the filling:

  • 100 g Greek yogurt (whisked)
  • 150 g feta cheese (crumbled)
  • 2 tbsp honey
  • 200 g spinach, chopped

 

Steps:

1. Mix well all the ingredients listed for crepes. Whisk gently so that no lumps are formed. Now, refrigerate the whole mix for a minimum of 2 hours.

2. Take a pan and heat it over medium flame. Grease with oil. Take 2 tbsp crepe batter and pour on the pan such that it covers whole of its area. Ensure that the batter is evenly spread.

3. Let it stay for a while and then flip it. Now, begin the filling with the feta and spinach. Cover only half of it and flip over the other half over the filled half. Now, flip the entire crepe and let it crisp to your liking, pouring more oil.

4. Serve with honey and greek style yogurt.
