Wadiyan or badiyan are made from urad dal with added spices and dried in sunlight, that was the traditional way, and was used in many homes. However good quality wadiyan are now also available in major markets. My mother used home made wadiyan’s to make potato curry and pulav, so today I used these market bought ones to make Punjabi Wadiyan Ka Pulav and it tasted absolutely delicious. They best go with boondi raita and can be served in any of the main meals. Its fairly easy to make this dish as they need only whole spices and salt as the ingredient. Ingredients

(serves 4)

  • Rice – 2 cup
  • Oil – 2 tbsp
  • Laung – 3 to 4
  • Badi elaichi – 2
  • Dal chini – 1 inch stick
  • Javitri – 1 piece
  • Kali mirch – 6 to 8
  • Wadiyan – 3 – 4 (broken in small pieces) (I’d about 2 inch diameter piece)
  • Greeen peas – 1/2 cup
  • Onion – 1 cup (cut in small pieces)
  • Salt to taste
  • Water – 3 1/2 cup

Method of Preparation

Preparation time: 10 min.

Cooking time: 20 min.

  • Heat oil in a pressure pan.
  • Add laung, badi elaichi, dal chini, javitri, kali mirch and saute for 20-30 sec.
  • Add broken wadiyan and fry for about a min.
  • Add onion and fry for a min.
  • Add rice, water and green peas and cook till rice is done.
  • Serve hot with your choice of raita.
