  • Two bunches of amaranth leaves, or Chaulai Saag
  • mustard oil, one tablespoon

  • One tomato chopped finely
  • One green chilli that has been sliced lengthwise
  • half a teaspoon of turmeric powder
  • One teaspoon of dried coriander

Instructions

  1. Remove any tough stems from the Chaulai Saag leaves and carefully wash them.
  2. Roughly chop the leaves, then set them aside.
  3. In a pan or kadai, warm the oil over medium heat. Stir in the cumin seeds and watch them crackle.
  4. Garlic that has been minced should be added and sautéed until golden.
  5. When the onions are transparent, add the chopped onions and stir.
  6. Add diced tomatoes and, if desired, green chilli. Cook the tomatoes until they are mushy and tender.
  7. Add salt, turmeric, and coriander powder at this point. Well, combine, then heat for a minute.
  8. Toss in the chopped Chaulai Saag leaves after adding everything to the pan.
  9. For about 10-15 minutes, or until the leaves wilt and become soft, add a small amount of water (about 1/4 cup) to the pan, cover it, and let it cook.
  10. Salt should be checked and adjusted as necessary.
  11. Remove from the heat and serve immediately with roti, rice, or your preferred bread.
