Recipe For Healthy Multi Grain Millet Khichdi

Multi-Grain Millet Khichdi is a healthy alternative to routine morning breakfasts. This will help anyone to kick start their day with much energy. The dish is highly nutritious and highly recommended for people who are on a diet.

Ingredients 

  • 2tsp chana dal
  • 2 tsp green gran
  • 2 tsp Toor dal
  • 1 tsp black pepper
  • 1 tsp cumin
  • ½ small cup of dry coconut
  • Three sprigs of curry leaves
  • 3 tsp of sesame
  • 1 pinch cinnamon
  • One fist of moringa leaves
  • 1-inch dry ginger
  • ¼ the tsp of asafetida

(These are the ingredients for masala preparation) and other ingredients are:

  • 2.5 cups of water
  • 1 cup of fox millet
  • 2carrots ( chopped)
  • 1 cup of fresh green peas
  • 1cup of a large onion ( chopped)
  • 1 cup of bottled gourd
  • 2 tsp turmeric 
  • 1 cup of any leafy vegetable
  • Salt for taste 
  • 3 tsp fresh cow ghee
  • 1 cup of Coriander
  • One lemon 

Recipe

  • First, take a bowl and cleanly wash the millet,s and soak them for 2 hours.
  • Take a pan and put it on medium flame. Once the pan gets heated, drop in all the ingredients for the masala mentioned above and roast them on low flame. After roasting, grind them into fine powder. This masala gives the best taste to the Khichdi.
  • Now take a heavy bottom vessel. Pour in 2.5 cups of water. Boil the water on a low-medium flame. Once the water starts boiling, add the soaked and drained millets and cook on medium flame until the millets are 50% cooked.
  • Mix well with carrot, peas, bottle gourd, turmeric, and onions. Let it cook for 3 minutes. Add any leafy vegetables, cover, and cook for 5-7 minutes on low flame.
  • Next, add the Ground powder, salt ( as required) and mix well. 
  • As the dish is about to complete, there will be no more water, and it gets the khichdi form. 
  • Garnish the Khichdi with coriander and ghee. 
  • Cut the stove off, and Multi-Grain Millet Khichdi is ready to serve.

Tip: Fox millets can be replaced with any kind of millet like Jowar, wheat, etc., and vegetables can be of any choice.
