For a traditional Indian family, you cannot keep them away from the sweets like halwa and kheer for long. They are just an integral part of our culture and food habits. So again I’m back with a perfect kheer recipe made with rice and coconut this time. Coconut Rice Kheer can be easily and quickly made at home and is a great choice for festivities & religious functions. You could also prepare it as a dessert for a small party. To give it a great look I added my favorite drink Roohafza as a garnishing, you can use any other rose colored drink as well. This gives a nice contrasting to the white colored kheer, while the dry fruit slivers do the rest. You can serve it hot, or as I did cold, either ways it tastes great. All you need is (serves 4-6)
Full cream milk – 4 cups
Coconut milk – 4 cups
Rice – 2 & 1/2 cup
Sugar – 1 cup (use substitute as necessary)
Dry fruits slivers – 1/4 cup
Roohafza – 4 tsp
Green cardamom – 8
Coconut Rice Kheer Recipe
Preparation time: 10 min.
Cooking time: 30 min.
Mix milk coconut milk and rice in a heavy bottom pan.
Boil until the milk thickens and rice is done.
Add sugar and cook for about 2 min.
Add green cardamom and mix thoroughly.
Add half of dry fruits and mix.
Garnish with other half of dry fruits and Roohafza.
Refrigerate for about 1 hour.
Serve cold.
