Maize, wheat and jowar are the basic diet of the inhabitants of Chhattisgarh. Since the state is quite opulent with an abundance of crops such as rice and oilseeds, so the people of the place are never short of their staple food.

The food of Chhattisgarh is categorized under two different heads - tribal recipes and non-tribal menus.The tribes of Chhattisgarh primarily add the various types of fruits that are commonly found in the forest areas of Chhattisgarh. Rakhia badi and petha are the two distinctive food items that are prepared by the tribal population of Chhattisgarh during major festivals.

Jalebi is another lip-smacking sweet dish of Chhattisgarh which is prepared in almost every household of the state. Since the people of Chhattisgarh like to have something sweet at the end of their meal, jalebi has become an integral part of the food menu of the state. Lentils such as chana dals with which a special recipe called bafauri is made in the state are also used as a staple diet by the local people.

Petha is a kind of exquisite sweet dish which is prepared by the Chhattisgarh tribes. Rakhia badi is a type of curry which includes rakhia phal or fruit, coriander, green chillies, ginger and seeds of slitted black gram.

As the name suggests, rakhia badi involves small globules which are made up of the rakhia fruit. To make rakhia badi, the black gram is thoroughly washed and kept in water for one whole night to get soaked. The finely cut fruit pieces are also washed and wrapped with cloth and stored under a stone. The next day the gram is pasted and all other ingredients are stirred well into this paste.

The tribal people generally try to make round balls with the paste but as they do not use any kind of artificial equipments hence more often than not the balls take other shapes too. Once the globules are made these are either stored for future use or are put into other curries.

Jalebi is a common variety of recipe which is prepared by the people of Chhattisgarh on every minor and major occasion. Made up of sugar, yeast, flour, saffron and water, jalebi is a favorite dish of every inhabitant of the state.

Dals or lentils are also used in Chhattisgarh households to make delicious spicy and non-spicy dishes. Bafauri is a variation of chana dal which is served with rice or roti in the state.
