It was a weekend today and I was longing for a filling and healthy breakfast. Although I love my Indian breakfast, I wanted something different today and I chose to have continental. What better than pancakes as they are filling and fairly healthy with honey and banana’s as the toppings. So my breakfast today was a glass of juice with Banana & Honey Pancakes, the adults were totally surprised and the kids loved them. The appearance of the breakfast plays an important role in creating the appetite and as you can see my pancakes did more than that. All you need is (serves 4)
Maida -1 cup
Baking soda – 2 tsp
Sugar – 1 tsp
Cinnamon powder – 1 tsp
Egg – 1 (beaten)
Milk – 1 cup
Ripe banana’s – 2 (mashed)
Butter – 2 tsp
Vanilla essence – 1/2 tsp
Oil – 2 tsp
Banana – 1 (chopped) for garnishing
Honey for garnishing
Sugar powder for garnishing
Banana & Honey Pancakes Recipe
Preparation time: 10 min.
Cooking time: 20 min.
Mix maida, baking soda, cinnamon powder and sugar in a bowl.
In another bowl mix milk, beaten egg, mashed banana’s, butter and vanilla essence.
Mix the ingredients in 2 bowls and mix well to get the batter ready.
Heat a small pan over medium heat and brush with oil.
Pour about 2 to 3 tbsp batter and cook till pancake is golden brown from both sides.
Garnish with banana pieces, sugar powder and honey.
Top it with ice cream (optional)
Serve hot and fresh breakfast.
