Rock Toast

I was wondering what to make for breakfast today which would be loved by both adults and kids and finalized on the idea of Rock Toast. The name of this dish sounds very cool and it can be made very easily. Rock Toast is made by shallow frying the bread in a batter of eggs and your choice of vegetables. Generally I put in onions, tomatoes, green chili and coriander leaves. The toasts come out really nice looking and taste great. They are a perfect recipe for the breakfast menu and can be served with some juice or tea or coffee on the side. Pretty filling they give the right nutrition for a day long work. Ingredients needed for  Rock Toast

(serves 2)

Eggs – 4

Salt to taste

Chaat masala – 1/2 tsp

Black pepper powder – 1/4 tsp

Fresh green coriander leaves – 1/2 cup (finely chopped)

Ginger – 1/2 tsp (finely grated)

Green chilies – 2 (finely chopped)

Tomato – 1/2 cup (finely chopped)

Milk – 1 tbsp

Bread slices – 4 pieces

Oil for shallow frying

How to make Rock Toast

Preparation time: 10 min.

Cooking time: 15 min.

Break the eggs in a bowl, add milk and whisk them well.

Add tomato, green chilies, fresh coriander and ginger, mix well.

Add salt, chaat masala, black pepper powder and mix well.

Cut the bread slices into halves and remove the sides.

Heat oil in a frying pan.

Cover the bread in egg batter and shallow fry from both sides until done.

Serve hot with ketchup or green chutney.
